The Tribeca chef's tasting menu often features ingredients that are too rare or limited for the à la carte menu — a three-pound wild striped bass, a single-origin olive oil from a harvest that yielded only 200 bottles, or a cheese that the affineur holds exclusively for restaurants of this caliber. These special ingredients become the centerpieces of courses that you simply cannot experience anywhere else.
