The chef's tasting menu at The Meridian represents the highest level of culinary craft in our kitchen. Unlike our standard tasting menu, which follows a set seasonal theme, the chef's tasting menu is composed daily based on what inspires Chef Bellamy — a perfect fish delivered that morning, an unusual variety of heirloom vegetable from a farmer friend, or a technique he's been perfecting for months.
This format demands trust from both the kitchen and the guest, and the result is a deeply personal dining experience. Courses may number anywhere from seven to ten, and the flow of the meal is adjusted in real time based on the table's response. Wine pairings for the chef's tasting menu draw from our reserve cellar, including allocated wines and library vintages that aren't available on the standard wine list.
